Ingredients:
2 lbs cream cheese, softened
1 1/2 cups granulated sugar
6 large eggs, at room temperature
1 1/2 cups heavy cream
1 tsp vanilla extract
1/4 tsp salt
1/4 cup all-purpose flour
Butter, for greasing the pan
Instructions:
Preheat your oven to 400°F. Butter a 9-inch springform pan and line the bottom with parchment paper.
In a large bowl, beat the cream cheese and sugar together until smooth and creamy. Add in the eggs, one at a time, beating well after each addition.
Mix in the heavy cream, vanilla extract, and salt until well combined. Then, sift in the flour and mix until just incorporated.
Pour the batter into the prepared pan and smooth out the top with a spatula.
Bake for 50-60 minutes, or until the cheesecake is golden brown on top and set around the edges but still slightly jiggly in the center.
Remove the cheesecake from the oven and let it cool in the pan for at least 30 minutes. Then, release the sides of the pan and transfer the cheesecake to a wire rack to cool completely.
Once the cheesecake is cooled, slice and serve. The top should be beautifully caramelized and the interior should be creamy and delicious.
Enjoy your Basque Burnt Cheesecake with fresh berries, whipped cream, or a drizzle of caramel sauce for an extra decadent treat!
