Pi, denoted by the Greek letter “π,” is a mathematical constant representing the ratio of a circle’s circumference to its diameter, which is approximately 3.14….15…9265359… (and the digits go on infinitely). This day is not only significant because of Pi, but it also happens to be Albert Einstein’s birthday, making it a true mathematician’s dream.
Here is a simple and delicious blueberry pie recipe that you can try:
Ingredients:
- 1 pie crust (pre-made or homemade)
- 4 cups fresh blueberries
- ¾ cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ¼ teaspoon salt
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg, beaten
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, add the blueberries, sugar, cornstarch, lemon juice, lemon zest, and salt. Mix well until the blueberries are coated evenly.
- Roll out the pie crust onto a 9-inch pie dish. Gently press the crust to fit the dish. Trim off any excess dough.
- Pour the blueberry mixture into the crust, spreading it out evenly. Dot the butter pieces over the blueberries.
- Roll out the remaining pie crust, and cut into strips for a lattice design, or place the entire crust over the filling, and cut slits into the top for ventilation.
- Brush the top crust with beaten egg.
- Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool down for at least 1 hour before serving.
