Ingredients:
1 whole chicken, cut into pieces
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
2 cups chicken broth
1 cup dry white wine
1/4 cup potato starch
1/4 cup water
1 cup sliced mushrooms
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
Salt and black pepper, to taste
Instructions:
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8-10 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, add the onions and garlic and cook until softened, about 5 minutes.
Add the chicken broth and white wine to the skillet and bring it to a boil. Reduce the heat and let it simmer for 5 minutes.
In a small bowl, mix together the potato starch and water until smooth. Slowly pour the mixture into the skillet, stirring constantly, until the sauce thickens.
