Recipe for Chicken Fricassee:

Ingredients:

1 whole chicken, cut into pieces
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
2 cups chicken broth
1 cup dry white wine
1/4 cup potato starch
1/4 cup water
1 cup sliced mushrooms
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
Salt and black pepper, to taste
Instructions:

In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8-10 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, add the onions and garlic and cook until softened, about 5 minutes.
Add the chicken broth and white wine to the skillet and bring it to a boil. Reduce the heat and let it simmer for 5 minutes.
In a small bowl, mix together the potato starch and water until smooth. Slowly pour the mixture into the skillet, stirring constantly, until the sauce thickens.
Return the chicken to the skillet and add the sliced mushrooms, parsley, thyme, salt, and pepper. Cover the skillet and let it simmer for about 30 minutes, or until the chicken is cooked through and the sauce has thickened.
Serve the chicken fricassee hot, garnished with additional chopped parsley or thyme, if desired.
