Ingredients:

1 pound penne pasta
2 tablespoons olive oil
2 garlic cloves, minced
1 small onion, diced
1/4 teaspoon red pepper flakes
1/2 cup vodka
1 (28-ounce) can crushed tomatoes
1 cup heavy cream
Salt and pepper to taste
Fresh basil, chopped (optional)
Instructions:

Cook penne pasta according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add minced garlic, diced onion, and red pepper flakes. Cook for 2-3 minutes or until onion is translucent.
Add vodka to the skillet and cook for another 2-3 minutes or until it has reduced by half.
Add crushed tomatoes to the skillet and stir to combine. Simmer for 10-15 minutes or until the sauce has thickened.
Reduce heat to low and stir in heavy cream. Simmer for an additional 5 minutes or until the sauce has thickened again.
Add salt and pepper to taste.
Toss the cooked penne pasta with the vodka sauce and top with fresh basil if desired. Serve hot and enjoy!
