Shaved Fennel and Celery Salad with Lemon Vinaigrette

Ingredients:

1 large fennel bulb
4 stalks celery
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
Freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
1/4 cup shaved Parmesan cheese
Directions:

Trim the fennel bulb, reserving a handful of the feathery fronds for garnish. Cut the bulb in half lengthwise, and then use a mandoline or sharp knife to slice the fennel into thin, almost translucent slices. Transfer the sliced fennel to a large bowl.

Trim the celery stalks and slice them into thin diagonal pieces, adding them to the bowl with the fennel.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until the dressing is emulsified.

Pour the dressing over the fennel and celery, and toss to combine. Add the chopped parsley and toss again.
