Tofu with Mixed Vegetables in Garlic Sauce

Recipe for Tofu with Mixed Vegetables in Garlic Sauce:

Ingredients:

1 block of firm tofu, drained and cubed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup of broccoli florets
1 cup of sliced mushrooms
1/2 cup of sliced carrots
2 cloves of garlic, minced
1 tablespoon of cornstarch
1 tablespoon of soy sauce
1 tablespoon of hoisin sauce
1 tablespoon of rice vinegar
1 tablespoon of vegetable oil
Salt and pepper to taste
Instructions:

In a small bowl, whisk together the cornstarch, soy sauce, hoisin sauce, rice vinegar, and 1/4 cup of water. Set aside.

Heat the vegetable oil in a large skillet over medium-high heat. Add the cubed tofu and cook for 5-7 minutes, stirring occasionally, until golden brown on all sides. Remove from the skillet and set aside.
Add the sliced bell peppers, broccoli, mushrooms, and carrots to the skillet and sauté for 3-4 minutes until they start to soften.

Add the minced garlic and continue to sauté for another minute.
Pour the sauce over the vegetables and stir until everything is coated. Add the cooked tofu back to the skillet and stir gently.

Cook for 2-3 more minutes until the sauce has thickened and the vegetables are cooked to your liking.
Season with salt and pepper to taste.
