Banana Cupcakes with Chocolate Frosting Recipe:
Ingredients:
1 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
1/2 cup granulated sugar
1/2 cup mashed ripe bananas (about 2 small bananas)
1/4 cup vegetable oil
1 egg
1 tsp vanilla extract
1/4 cup milk
For the chocolate frosting:
1/2 cup unsalted butter, at room temperature
2 cups powdered sugar
1/4 cup unsweetened cocoa powder
1/4 cup heavy cream
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (180°C). Line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the sugar, mashed bananas, oil, egg, and vanilla extract until well combined.
Gradually mix in the dry ingredients into the wet ingredients, alternating with the milk, until a smooth batter forms.
Fill each cupcake liner about 3/4 full with the batter.
Bake for 18-20 minutes or until a toothpick inserted into the center of the cupcakes comes out clean.
Let the cupcakes cool completely on a wire rack.
For the chocolate frosting:
In a large bowl, beat the butter until creamy.
Gradually mix in the powdered sugar and cocoa powder until well combined.
Mix in the heavy cream and vanilla extract until a smooth frosting forms.
Pipe or spread the frosting onto the cooled cupcakes.
Optional: top with sliced bananas or chocolate shavings for garnish.
