2 cups beef broth
1 tablespoon tomato paste
1 tablespoon honey
1 tablespoon Dijon mustard
2 bay leaves
Salt and black pepper, to taste
Instructions:

Preheat your oven to 325°F (165°C).

Season the beef brisket with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the brisket to the Dutch oven and cook until browned on all sides, about 10 minutes.

Remove the brisket from the Dutch oven and set aside.

Add the onions and garlic to the Dutch oven and cook until softened, about 5 minutes.

Add the red wine, beef broth, tomato paste, honey, Dijon mustard, bay leaves, and salt and black pepper to the Dutch oven and stir well.

Add the brisket back to the Dutch oven, making sure that it is submerged in the liquid.

Cover the Dutch oven and transfer it to the oven.

Cook for 3-4 hours, or until the brisket is tender and can be easily shredded with a fork.

Remove the brisket from the Dutch oven and let it rest for 10-15 minutes.

Skim any fat from the liquid in the Dutch oven and discard the bay leaves.

Serve the brisket with the cooking liquid on the side.
